Make your own chicken noodle soup and lemon curd

Give the gift of Chicken Noodle Soup (a great one for your teacher!)


Ingredients:

¼ Cup of orange lentils
2 Tablespoons dried onion flakes
3 Tablespoons chicken stock granules
1 Teaspoon dried dill
1/2 Teaspoon each celery seed and garlic powder
Approximately 1 cup dried medium egg noodles
3 bay leaves

Directions:
In a two-cup jar, layer from bottom in the order listed above, then seal the jar.

Write these instructions on your gift tag:
Bring eight cups of water to boil in large saucepan. Stir in jar of soup mix. Cover, reduce heat and simmer for 25 minutes. Discard bay leaf and stir in 1½ cups of frozen corn or mixed vegetables and 2 cups of cooked, diced chicken or turkey. Simmer for five minutes until vegetables are tender and chicken is heated through.

Microwave Lemon Curd for mum (Great for kids aged nine and up!)


Ingredients:

1 cup fresh lemon juice
1 cup sugar
113 grams butter, melted
2 eggs

Directions:
Mix ingredients well in large microwave safe bowl.

Microwave in one minute increments from 6-12 minutes, stirring well after each minute. When it coats the back of the spoon, it is done. Pour into jar and let cool. Keep in fridge for up to two weeks. Yummy!
