1 cup flour
3/4 cup water
4 cups oil (or enough to deep fry)
A pinch of yeast powder
A pinch of salt

For the syrup
3 cups sugar
1 ½ cups water
Juice of 1 lemon
1-2 drops vanilla essence

• For the syrup, dissolve the sugar in water in a saucepan, adding the lemon juice and vanilla essence. Once it starts to boil, reduce the heat and let it simmer for 10 minutes before setting aside.

• For the zalabia, mix the yeast with the water and add to the flour, kneading to make dough.

• Leave the dough covered in a warm area for about 2 hours.

• Heat the oil. Then drop in a small ball-like scoop of the dough and fry until golden brown.

• Drop into the cold syrup and serve in small, decorative bowls.
