The Westin’s Chef Tournant excites with three-texture beef consommé

Four Dubai chefs under the age of 30 have been chosen to compete for the title of Time Out Dubai’s Young Chef of the Year, based on the strength of recipes made from a limited number of ingredients. The chefs will present their four-course meal at the Miele Gallery on Sheikh Zayed Road on November 15. Here is what they will cook ... Starter Tofu and orange glazed sous vide salmon (served cold), micro salad, saffron aioli, dehydrated cherry tomato, snapper and nori cracker and lentil salsa.
Soup Three-texture beef consommé: Beef consommé, beef consommé cherry with assorted mushroom, beef consommé explosion ravioli, chicken meat powder and butternut squash custard. Garnish with asparagus, baby red radish and micro salad.
Main course 24-hours sous vide lamb rack, marinated with spices and herbs, confit with olive oil, celeriac puree, caramelised onion puree, spinach puree, mint sauce and garnish with crispy Chinese noodle and micro green.
Dessert Nitrogen xi mi lu: Nitrogen poached fresh mango juice infused with mango soup, pear cherry, sago and fresh dice mango BRZ. Garnish with coconut foam, crushed nut, berries, mango cherry and pop candies.
