What one thing would you like to do in Dubai that you haven’t done before? Definitely Skydiving! I think I would like the adrenalin kick and stress release. Being a chef is hard work!
What career journey did you take before joining your restaurant? I spent five years in my home country Germany studying hospitality and culinary. Then I decided come to Dubai to accelerate my career and learning, getting high-class experience in multiple cuisines from all over the world. I spent seven-and-a-half years working for a hotel group gaining experience in wellbeing cuisine, vegetarian, Spanish and seafood. I was responsible for running the main operation which included eight venues and banquet facilities. I also got the chance to do some work in London in the Fat Duck which is a three-star Michelin restaurant. Now I’m overlooking the nine restaurants and five lounges of the JW Marriott Marquis and a team of 160 Chefs.

What’s your dish recommendation at your restaurant? It’s not fair to ask only for one dish, I would say every dish has something special, a thought behind it and full of flavoUr. If you force me I would say breakfast in La Farine, everything on the menu is delicious but it definitely has the best Eggs Benedict in town.
