How long have you lived in Dubai? I have lived in Dubai for eight-and-a-half years, three of which with my lovely wife Jennelyn. I love the city and want to stay for many more years.
Where do you like to hang out in Dubai when you’re not at work? I like to go to Dubai Mall because of the bookstore Kinokuniya, which has a great variety of professional cookbooks. I also love Madinat Jumeirah for the relaxing atmosphere and choice of restaurants.
What’s your top tip for visitors to Dubai? Visit Old Dubai and purchase some great authentic spices and teas.If you don’t spend all your money there, pass by gold souk and buy some jewellery for your loved ones. Visitors definitely need a Dubai resident with them who knows how to bargain!
What one thing would you like to do in Dubai that you haven’t done before? Definitely Skydiving! I think I would like the adrenalin kick and stress release. Being a chef is hard work!
What career journey did you take before joining your restaurant? I spent five years in my home country Germany studying hospitality and culinary. Then I decided come to Dubai to accelerate my career and learning, getting high-class experience in multiple cuisines from all over the world. I spent seven-and-a-half years working for a hotel group gaining experience in wellbeing cuisine, vegetarian, Spanish and seafood. I was responsible for running the main operation which included eight venues and banquet facilities. I also got the chance to do some work in London in the Fat Duck which is a three-star Michelin restaurant. Now I’m overlooking the nine restaurants and five lounges of the JW Marriott Marquis and a team of 160 Chefs.

What’s the best thing about dining at your restaurant in 2015? The best thing about our restaurants is that we offer a unique and crafted experience every time, custom-made for you and your friends' occasions. What’s your dish recommendation at your restaurant? It’s not fair to ask only for one dish, I would say every dish has something special, a thought behind it and full of flavoUr. If you force me I would say breakfast in La Farine, everything on the menu is delicious but it definitely has the best Eggs Benedict in town.
