We get to know Chef Giovanni De Ambrosis from Tribeca
Name: Giovanni De Ambrosis Job title: Development Chef – Tribeca Age: 38
How long have you lived in Dubai? Seven years
Where do you like to hang out in Dubai when you’re not at work? I enjoy spending time with my friends discovering new food concepts in Dubai, everything from the Fine Dining on offer in our high profile hotels to the Street Food in Bur Dubai. I also love to spend time exploring the new F&B concepts which pop up along Jumeirah Road. Living in this sunny climate also means I enjoy spending time at the beach!
What’s your top tip for visitors to Dubai? There are so many amazing things to do here but I believe a must-see for all visitors is to go and experience the Old Town and it’s markets. Also visitors should not forget the Burj Khalifa and the immense desert we live in, both great either by day or night.
What one thing would you like to do in Dubai that you haven’t done before? Being adventurous I would like to try my hand at fly boarding. However my passion for Italian food, always intrigues me to go and taste test all of the Italian restaurants in Dubai…. See how they recreate the ‘Italian way’.
What career journey did you take before joining your restaurant? Before descending to Dubai I was lucky enough to travel the world to some amazing places including Zanzibar, Shanghai, Miami, Moscow and Italy. Throughout my career to date I have launched some amazing new F&B concepts and consulted alongside some of the industry’s most renowned professionals.
Why should Time Out readers try your restaurant? I believe that Tribeca offers an original dining experience in Dubai. Our menu is a fusion between Italian, American and eastern cuisines with an organic twist. We not only have organic food options but we also have organic options at the bar. Where I can I like to take the time to go and meet our guests, their opinions and experience at Tribeca matter to me and I like to get their personal feedback.
What’s the best thing about dining at your restaurant in 2015? For me it has to be the combination of our great organic food and beverage selection, along with the entertainment and hospitality put on by the Tribeca family.
What’s your dish recommendation at your restaurant? Being Italian I would always recommend something true to me, for example our gnocchi (ricotta gnocchi handmade with porcini mushrooms and truffle oil) or any of our ‘primi piatti’ dishes. However for those with a sweet tooth I would encourage you to try our cheesecake (steamed cheese cake made with almond crumble and passionfruit served in a three-tier glass tower) it never fails to wow your taste senses…. arriving to the table in honour of one of the world’s tallest building… Our Cheesecake arrives served split into layers in a unique glass tower, standing above any other dessert!
