How long have you lived in Dubai? My adventure in Dubai started eight months ago. Firstly I started working for Real Madrid Cafe as Sous Chef and after I got hired by Tapeo Gastrobar as Executive Chef, located in the Galleries Lafayette 2nd floor at The Dubai Mall.
Where do you like to hang out in Dubai when you're not at work? It is a good question. In my free time it is very important to me being with my family, my wife and my son. I don’t mind where to go if I am with them. We are very familiar. We like going to taste new restaurant, all kind of cuisines, gourmet or fast food it does not matter to me. Also we usually go to the cinema and we love karting.
What's your top tip for visitors to Dubai? I like all in Dubai, the architecture, the nature, the desert, people, their culture, all... I love places like Madinat Jumeirah, JBR, The Dubai Mall. I like the excursions to the desert or the architectures of the mosques.
What one thing would you like to do in Dubai that you haven't done before? Undoubtedly I miss car racing. I am delighted to drive and I cannot wait to find the time to take to my son to karting.
What career journey did you take before joining your restaurant? I have always been involved in the kitchen as it’s the think I know best. Before coming to Dubai I had my own restaurant at the beach in Alicante, Spain. In my restaurant I have learnt all types of Spanish cuisine depending on the geographic area. Spanish cuisine is the richest one I have learnt. I delivered traditional Spanish food which everyone likes.
Why should Time Out readers try your restaurant? Everything. We are the only Spanish restaurant in Dubai, specialized in Spanish rices and paellas, also tapas. Our Andalus Gourmet retail is the only point of sale of Spanish gourmet products in exclusivity in Dubai. We offer customers the possibility to get our gourmet products, with the ones we cook at our kitchen. So they can learn how to cook. For this, every month I just teach Spanish cooking class, everyone is invited to come and take part of this. In all my dishes there are two very important ingredients, love and passion for what I do. I love cooking and I love to keep the people happy.
What's the best thing about dining at your restaurant in 2015? We have a very genuine Spanish menu full of our speciality, Spanish rice and paellas as well as tapas. We are changing the menu by including a lot of varieties of Spanish types of rice like "Arroz con Bogavante" Spanish rice with lobster, “Caldereta” Spanish rice with seafood, “Arroz campero” rice with chicken and mushrooms, as well as our well known seafood paella.
What's your dish recommendation at your restaurant? All our tapas and paellas have something special and different of each other, but if I have to recommend something, surely our speciality, paella.
