What one thing would you like to do in Dubai that you haven't done before? Create a modern Emirati cuisine where I can use the ancient techniques combined with today´s healthy life style by keeping the flavoUrs and authenticity of the dishes.
What career journey did you take before joining your restaurant? I entered the world of luxury fine dining through the Ritz-Carlton Chicago, then with French icon Chef Jean-George and followed by a successful stint at the renowned Chateau Marmont.
