Get to know Chef Himanshu Saini from Tresind Indian restaurant in Dubai
How long have you lived in Dubai? I have been living here for almost a year now.
Where do you like to hang out in Dubai when you’re not at work? I spend most of my time relaxing at the beach or would go out to try various local Arabic treats in different restaurants - to get an authentic taste of local ¬cuisine and culture.
What’s your top tip for visitors to Dubai? Well as Dubai’s culinary scene has become one of the world’s most diverse and dynamic one. Offering multi-cuisine options from refined cuisine by the world’s most renowned chefs to mouthwatering snacks from street vendors. I would really suggest everyone who is visiting Dubai to try out some of the various delish, appetizing cuisines this cosmopolitan city is offering.
What one thing would you like to do in Dubai that you haven’t done before? I would like to open my very own restaurant in Dubai based on the concept of Global Islamic Cuisine. I want to create dishes which are never been savoured before.
What career journey did you take before joining your restaurant? Well, I got my breakthrough with Indian Accent restaurant located in Delhi. After that I launched two more successful restaurants in India before moving to New York, where I worked at fine dining restaurant Vermilion for a very short period. Then, in 2014, I got an opportunity with Tresind, a modern Indian fine – dining restaurant located in Radisson Royal Hotel on Sheikh Zayed Road. So, I decided to move to Dubai to experience other cultures and techniques that would be valuable to my career.

Inspired by the unique concept of molecular gastronomy, the menu showcases original Indian delicacies that are presented in the most modernistic approach. Ideations like deconstructed pani puri, tuna bhel, mushroom galouti or balu shahi doughnut, not only reflects the uniqueness of the brand but also gives a refreshing twist to cater to the most discerning epicureans.
What’s the best thing about dining at your restaurant in 2015? Creativity, presentation of the dishes and keeping the original flavours intact is the best thing about Tresind. Each dish at our restaurant offers a one of a kind gastronomical experience that will savuor not only your taste buds but will definitely change any preconceived notions ever about modern Indian cuisine.
