How long have you lived in Dubai?
I have been living in Dubai for 4 years now, but I’ve been in the UAE for almost 6 years already.
Where do you like to hang out in Dubai when you’re not at work?
I like being with my family. When I’m off from work, we normally go to parks, desert, or the beach. We like to enjoy nature – plants and greeneries, fine desert sands, cool water and calming sound of the waves.
What’s your top tip for visitors to Dubai? Go visit the famous places like the BurjKhalifa and Burj Al Arab. Experience outdoor activities like desert safari and if they are brave enough, go skydiving. But, I also recommend that they visit the museums, and other old places, so they can appreciate and understand more how people before this modern times, lived without the comfort that we have now.
What one thing would you like to do in Dubai that you haven’t done before? Probably flying an aerobatics plane. It’s my childhood dream. Maybe I still have time to try it here.
What career journey did you take before joining your restaurant? I came from Sicily, which is at the southern part of Italy. Our place, being right in the middle of the Mediterranean Sea, have been colonized and influenced by different cultures: Arabs, Spaniards, Portuguese, Greek, French, etc., they have left strong traces in our way of cooking. I remember I started my passion for cooking when I was a child, when I used to cook beside my grandmother.
In the UAE, I started my career as an Italian Chef. As I go on, I started working on Mediterranean cuisine at the Crowne Plaza Festival City and Cove RotanaRas Al Khaima.
Why should Time Out readers try your restaurant? First, because we are the first and right now the only 100% vegan restaurant in Dubai. Second, we want to revolutionize the concept of vegan food. We create a style of cooking that’s close to home – there’s familiarity and genuineness.
We work a lot on fancy combinations, creation and presentation of the dishes, and very important is that we serve the right portions with the right nutritional doses.
What’s the best thing about dining at your restaurant in 2015? The whole experience. Plus you can find all our products – vegan cheese, meat substitutes like burgers, sausages, etc., vegan spreads and creams, and other vegan products that you cannot find somewhere else.
What’s your dish recommendation at your restaurant? We have the best vegan pizza and the best vegan ice cream in Dubai.
