What's your top tip for visitors to Dubai? To look for the little restaurants. Dubai has a lot more to offer than the big lights.
What one thing would you like to do in Dubai that you haven't done before? Go up the Burj Khalifah.
What career journey did you take before joining your restaurant? I’ve worked in all kind of restaurants, from Michelin star to where I started a fish & chips shop in Glasgow. And the most important thing I’ve learned is that whatever you are doing, do the best you can with what you've got.
Aside from where you work. Where is your favourite place to dine in Dubai? I just recently went to Cut in The Address and the food was amazing. I’m looking forward to the Jason Atherton restaurant as he is one of the top chefs in UK.

What's the best thing about dining at your restaurant in 2015? We will be launching development updates for our current a la carte menu with new exciting dishes and we have a wonderful new season of Tour de France which takes regional dishes and brings them to Dubai with modern techniques.
What's your dish recommendation at your restaurant? Our beef is the best in Dubai and we have the ethos of using many different cuts so we bring the best flavours out in all our dishes.
