Gaucho Dubai’s Executive Chef Jamie Robertson talks food and more to Time Out
Time Out Dubai staff
Name: Jamie Robertson Job title: Executive chef Age: 30 How long have you lived in Dubai? Five years.
Where do you like to hang out in Dubai when you’re not at work? It’s not often that I’m not at work, however when I’m off I always like to try somewhere new. With so many openings recently there has been plenty to choose from. Most recently I visited Novikov and a had a great night.
What’s your top tip for visitors to Dubai? Have a plan. There is so much to do here in Dubai, if ever anyone is coming to visit I always ask what they want to do and see, so no time at all is ever wasted.
What one thing would you like to do in Dubai that you haven’t done before? I would say sky diving, on the odd occasion I am at the beach you can always see the sky divers, it looks like something that would be fun.
What career journey did you take before joining your restaurant? I tried to gain as much experience as possible, I worked for large chains, stand alone restaurants, franchise restaurants and hotels. Each taught me something new and different and helped me to adapt to any situations you may find yourselves in on a daily basis. Why should Time Out readers try your restaurant? I think in terms of steak restaurants we offer something a little different, the beef we use can only be found in our restaurant in Dubai as we import it directly. The time and effort this takes is what makes it special, each steak we serve is the product of a carefully managed three-year process that ensures the amazing consistency and quality of our beef.
What’s the best thing about dining at your restaurant in 2016? The food aside, I would always say the service we offer our guests, everyone who enters our restaurant becomes part of the family for the night and we do our utmost to make sure everyone feels right at home.
What’s your dish recommendation at your restaurant? Steak would be the easy answer, however my personal recommendation would be to try our slow braised beef ribs.
Aside from where you work, where else do you like to dine in Dubai and why? i wouldn’t really say I have a favourite place, I always want to try something new or somewhere new.
What is the best dish you’ve ever tasted in your life and who made it? I spent a few days in the Champagne region in France, we spent the evenings in their private chateaus where their chefs would cook the menu paired with the bubbly we would taste. I couldn’t tell who the chefs were but the food was fantastic and the experience unforgettable.
