What’s your top tip for visitors to Dubai? I would recommend visiting Old Dubai, take an Abra to the Creek side and visit the spice and fish markets.
What one thing would you like to do in Dubai that you haven’t done before? I would like to skydive.
What career journey did you take before joining your restaurant? I worked in different Michelin star restaurants where I learned the different techniques of cooking and discovered new products such as El Bulli, Celler de Can Roca, Hacienda Benazuza, Café de Paris etc.

What’s the best thing about dining at your restaurant in 2016? The best thing is the food, great atmosphere and the passion for our guests.
What’s your dish recommendation at your restaurant? I would definitely recommend our roasted suckling pig to share for about six people, served whole and cut in front of the customer.
Aside from where you work, where else do you like to dine in Dubai and why? I like to try different types of restaurants such as Asian, Mexican or Peruvian because I like their flavours and the ways of cooking.
What is the best dish you’ve ever tasted in your life? The best dish for me is Chanfaina, it’s a traditional dish my region, it contains lamb, rice, cumin, and my mum prepares it very well.
