How long have you lived in Dubai?
5 months, prior to this I was based in Abu Dhabi for 3 years.
Where do you like to hang out in Dubai when you’re not at work? I’m a big fan of the beach (Kite Beach) having grown up along the coast in South Africa. I enjoy spending time at Ripe Farmers Market and most of all getting to spend time with my wife and new-born baby boy.
What’s your top tip for visitors to Dubai? Expect the unexpected…Dubai is full of extremes. So you have to enjoy every aspect of it from Old Dubai, from the Gold Souk and Spice Souk, to the lavish brunches, outrageous malls and the great restaurants that have established themselves in this unique and incredible city.
What one thing would you like to do in Dubai that you haven’t done before? Skydiving!!! I have a burning desire for some unknown reason to jump out of a plane.
What career journey did you take before joining your restaurant? Prior to the Middle East I was working in Europe, mostly in London. During this time was when I really formed my culinary arsenal. I had the privilege to work with some truly talented and passionate chefs, and eat in some amazing restaurants which has determined my culinary journey.
Why should Time Out readers try your restaurant? The Raw Bar experience at J&G Steakhouse. The emphasis on the Raw Bar is bringing the kitchen into the dining room. By showcasing our selection of meats and cuts we promote interaction between the Chef and guest. This is to help our guests feel more comfortable about the dining experience in terms of guiding them from the choice of beef to the freshly shucked oysters.
What’s the best thing about dining at your restaurant in 2016? The journey!!! J&G Steakhouse is still new and we are on the verge of making our mark on the industry. This is a great opportunity for the guest to experience the beginning of our journey and to watch us blossom. I recommend Dubai foodies follow us closely to not miss out on the unique dining experiences coming up at J&G Steakhouse.
What’s your dish recommendation at your restaurant? The hand cut Tuna Tartare to start, the top 1.4kg Tomahawk carved tableside for the main course, and the flamboyant Banana Foster for dessert.
Aside from where you work, where else do you like to dine in Dubai and why? I haven’t had much time with the opening of the J&G Steakhouse and The St. Regis Dubai hotel. I do enjoy eating at Marina Social; I’m a big fan of Jason. Ask any chef this question and they will answer the same it depends on the mood they wake up in!
What is the best dish you’ve ever tasted in your life and who made it? Wow, I have had so many great and mind-blowing dishes. The one that just popped into my head is a Pad Thai that I had in Thailand. It was about 6 months after 2012 Tsunami that destroyed so much of the country. It was cooked by a Thai lady in a building with no roof and with one wall; she had just made a little stall in this derelict building. It was such an incredible meal in the most unexpected places. That’s what I love about food and traveling – you never know what you will uncover.
