Gazpacho Andalous
1000g tomatoes
90g red peppers
30g onion
110g cucumber
3g basil leaves
3g sugar
8ml xeres vinegar
8ml balsamic vinegar
30ml egg yolk
75g focaccia bread
75ml olive oil
Garnish
1pc fresh egg
100g cucumber
100g tomatoes
200g king crab
25ml olive oil
10ml lemon juice
Salt and pepper to taste
Method
Gazpacho
窶「 Clean, peel and cut all ingredients.
窶「 Marinate all ingredients for 1 night in the fridge.
窶「 Blend all ingredients in a bar blender till smooth consistence.
窶「 Pass through a fine chinois and put back everything in the bar blender.
窶「 Add egg yolk and olive oil.
窶「 Check taste and consistence.
Garnish
窶「 Peel and cut into small dice the cucumber.
窶「 Boil the tomatoes for 10 second the put in a ice water, peel them, remove the seeds and cut into small dice.
窶「 Boil the eggs till hard boil, remove the shell then chop them.
窶「 Mix king crab, eggs, tomatoes dices and cucumber dices together, add olive oil, lemon juice, salt and pepper.
