Purple Potato Gnocchi Pak Choi, Peppers, Gingered Pumpkin and Coriander Sauce

1000g purple potatoes
3pcs egg yolks
40g sea salt
800g pak choi
500g yellow capsicum
500g red capsicum
300g butternut pumpkin
1000ml cream
20g red chili
20g ginger
50g coriander leaves
100g onions white

Method
窶「 Cook the potatoes, peel and mash. Season with salt, add egg yolks and flour. Form gnocchi and cook them for 10 minutes.

窶「 For the sauce, steam ginger, onions, and pumpkin. Blend with cream and season with salt.

窶「 Braise in olive oil peppers and pak choi, add chili and coriander leaves.
