The result is this decadent burrata butter chicken, a first for any Indian restaurant – so say the team – bringing together influences from India and Italy.
Chef Hari Nayak says that he’s “not trying to mess with Indian cooking” but merely looking at ways to “elevate” dishes.
“We are just re-inventing the classics. We haven’t done anything different, we’ve just made it better,” Nayak tells Time Out Dubai.
“Traditionally in India butter chicken is finished with crème fraîche on top. However, using burrata takes it to another level. The roasted tomato and cream sauce go perfectly with the the fresh burrata, and when you break the cheese open, the creaminess of it improves the flavour.”
He adds that this culinary creation has been in the pipeline a while.
“When I tasted burrata for the first time many years ago, I knew it was an ingredient we could use somewhere,” he says. “And when we tried these two they complemented each other so well.”
