A low-ceilinged, stylish hangout, Spectrum on One attracts mainly young, fashionable diners who fancy a sophisticated night out without the airs and graces that might normally accompany an expensive meal. There are plenty of different types of cuisine to choose from, whether you fancy fresh and extortionately-priced sashimi or overly creamy moule frites. Though the restaurant falters slightly when it comes to European fare, Asian options are far more worthy; opt for a Thai curry or selection of sushi if you want to be impressed. There’s little to quibble over when it comes to service and, all things considered, if you’ve money to burn and aren’t a committed foodie, there’s much to enjoy here if you bring enough friends along to take advantage of the fairly regular drinks promotions.

best brunch in town. service was really amazing and the food was quite awesome!!! best place to gather family and friends and perfect restaurant for a party. A PLACE THAT WILL NEVER FORGET. price is perfectly equal to the quality of food. Spectrum on One Brunch is really highly recommended.

The staff is outgoing and always available.

I love their bread basket, and different kinds of papadums proposed with butter and olive tapenade to get up at night.

So far our choices have been focused on:
- Arab cold mezze platter (hummus, tabouleh, babaghanouj, moutabel, zaatar labneh, Fattoush salad with Arabic bread)
- Chicken Tikka Masala (Tender pieces of tandoori chicken with peppers, onions and lightly spiced tomato sauce).
- Beef Tournedos "Rossini" on rosti with truffle sauce.
- 1l San Pellegrino
- Argentine Malbec Shiraz 1dl 2010
- A cappuccino
- A cafe mocha

The mezze platter was impressive and well presented with Lebanese bread.

The chicken tikka masala my guest was not too spicy on request but wish to tender cuts. Presented with an excellent white rice.
My tournedos "Rossini" beautifully presented on a bed of hash browns. Meat tender. A delight.

With 2 coffees, pastries have been proposed. Great idea.

To emphasize the special attention of the servers and the butler who throughout the meal is concerned about our satisfaction.

Returned on the 29th of August mainly for the mushroom truffle soup and to try something new before the 50% off promotion ends.
I was taken on a round of the restaurant and shown the different kitchen stations and the bar. The European and Indian kitchen were the most popular ones. It was nice to have the staff remember me.
Bread with butter and olive tampenada and pappadums materialize in almost no time. Ordered for classic mojito. Mushroom soup was as delightful as last time. For the mains. I had the 10oz. ribeye medium done. The meat comes from The Exchange Grill and I was naturally apprehensive after the poor quality steak I had there last year. I did mention this to the staff. This time the steak did more than redeem itself. Served on a bed of garlic mashed potoato and served with mushroom and sautéed vegetables in separate bowls. The veggies were sautéed on request as I wasn’t keen on the steamed vegetables. The ribeye was so full of flavour and juicy. The béarnaise and peppercorn sauce were redundant, the seasoning of the steak was so good. It was cooked such that at a glance you can’t make out the fat from the meat. Best ribeye I’ve had, I must say, though at Dhs 325 was more than expensive.
The staff had offered to get a fresh mojito as this one had been left untouched since it had come with the soup. The mojito tasted not sweet enough and actually a little sour which they took back without charging.

10 oz. ribeye Dhs 325
Paid only Dhs 190 for a meal which will linger in your memory.

Open and spaced out atmosphere. Didn't feel like an exclusive fine dining restaurant what with all the live cooking station whch I am sure must come alive during brunch time. Last night it was rather quiet.
Service was prompt, staff helpful.

Pappadum and bread with butter and olive paste were brought to the table no sooner than I had settled into the chair. I've had better bread elsewhere-this one was chewy. I was taken aback when asked whether I want lime or lemon with the sparkling water.

Next a comedy of errors when I ordered for a Sidecar cocktail in favour of forest mushroom soup with black truffle oil, then tried to reverse the situation with the waiter telling me it can be done and finally ended up having both which, in the end, was not a bad thing. The soup was an absolute delight with appreciable droplets of oil.
A 7oz. beef medallion, medium done, on a bed of potato, seared foies gras with glazed black truffle oil. Excellent foie gras albeit a small one. To finish off, I had the melting chocolate with icecream. Petit feurs offered as I waited for the bill which, with 50% off for Ramadan, came to Dhs 213. It was fair rate but at regular prices-no way.

Good Place overall, service is a bit on the slow side and the waiters are not well informed about the many menue's but overall compared to other similar places in Dubai its an 8/10.
Price's is not cheap but also not expencive depends who you take with you and how much you want to entertain them.

I have been to Spectrum on One on several occasions for brunch and dinner and was never disappointed.
My last visit however was different.
When my friends asked me to join them for the last brunch before Ramadan, I was a little hesitant as I had seen it before and anyways, I’m not the biggest Champagne lover…
When we arrived there, however I was informed that I have a choice of unlimited drinks without champagne now, for a much better price, so I opted for this.
But that's not the big news!
Knowing the brunch from my previous visits I was amazed by what has changed. The crowd is much younger now and more fun. The food, which was already great jumped up another notch and they have live stations everywhere now.
There is burning foie gras and homemade dim sum, plenty of carving stations including a whole turkey (where can you get a carved turkey in the middle of the year?)
The Teppanyaki chef cooked me some beef but not without lighting the whole grill on fire (on purpose) and the cheese room is big enough for a lorry to park in with dozens of dairy delights.
The one thing I would comment on is the teriyaki skewers for being too dry and slightly cold.
The service was excellent too! A big Thank you goes out to our server Lucy! She was very attentive and helpful and really made us feel like VIP’s.

Great job Spectrum team! I cant wait to come back in the fall!

We've been to the Spectrum Friday brunches 5 times over the past 2 years. The 4th time we commented that the overall quality had diminished somewhat. The last time we went in January 2010 and there was a noticeable reduction in selection and the quality standard had dropped. The Alaskan crab legs the last 2 times were watery and tasteless. Japanese selection was reduced as well. Champagne was good and plentiful buy the food was lackluster. Not worth the Dhs550.00.

Best brunch I have tasted so far. Service is excellence with the attentive and very friendly staffs. First time I find that brunch for three & half hours is not enough to taste all the very nice food served. It serve not only free flow of Moet & Chandan, but also wine, port (best port i had), mojitos etc..

The oyster shots in cocktail and ginseng are really wonderful and fresh. Even the simplest sushi with salmon roe is so crunchy.

The Best Brunch Winner this year does not deserve the title. Staffs are not friendly and food nothing compared to Spectrum. Only thing that stand out is the live band and the more party-going crowd that sway with the live music there and lots of garden to move around.

My choice is Spectrum on One! They should be the winner of this award.

Keep it up! Toss to all the happy and friendly staffs! You made Spectrum stands out!

beautyfull decoration, with alot of food, unlimited moet n chandon champagne, and the most important for me is the service that is outstanding. the server very polite and friendly

I really enjoyed having dinner in Spectrum on one. I came 2 times and the food always exceed my expectation... I believe this restaurant is the best international restaurant in the town so far....

Should attempt japanese food-dynamite cone and Sezhuan-chinese style..

the staffs are very charming at glance and giving us the greatest moment when we come there...

A definite must do. Great choice of international foods. Decor is classy but a bit sombre. One of my favorites with the Ritz Carlton brunch ( fabulous garden setting, a large choice of really "high-quality" dishes and products, and the most amazing dessert selection in Dubai-why is it not listed here?)
