Sticking to its strict code of serving only Japanese cuisine, not diluting its menu with other Asian dishes and employing Japanese staff, Miyako is on the right path. Although relatively small, this ambient, serene eatery feels open and expansive, yet intimate and warm at the same time. And while there's beauty aplenty in the decor, it's the food that underlines Miyako's brilliance. The sushi is impeccable – craft and precision is evident in every lovingly put together roll. The fresh fatty tuna dazzles, but the best thing on the mammoth menu has to be the Kaisen Kaminabe – poached salmon, scallops and vegetables cooked in front of you. Though you'll see every seat with a bum on it, you'll never find yourself waiting for service, nor with an empty bowl in front of you for long. There are plenty of sushi restaurants in Dubai, but very few measure up to this level of excellence.
