From Time Out Dubai Eating Out 2008

On our last visit to Verre, we were concerned with consistency. Gordon Ramsay’s restaurant had impressed us in the past with its undeniable brilliance, but Ramsay’s executive chef and protégé Jason Whitelock had re-located, and his new charge, Matt Pickop, who had worked with the Scotsman at his Claridges restaurant in London since 2002, had taken the reigns.

Since consistency is drummed into all of Ramsay’s students, we were expecting excellence and nothing less. Would the new executive chef be able to cut the mustard? If The Menu Prestige, which changes slightly from time to time, is anything to go by, the changeover is definitely not an issue.

The roasted sea scallops with caramelised pork belly and pan-seared watermelon remain sublime, and the vine tomato minestrone with basil pesto is fresh and lively. Next, tear into the yellow fin tuna, which comes both seared and then as a carpaccio, accompanied by pickled white radish and a soy dressing that balances the flavours with panache.

The pressed foie gras des landes with cured duck breast and carpaccio of charantais melon doesn’t disappoint, and Verre’s familiar flashes of brilliance are present in the line-caught halibut with lobster and herb risotto with lobster bisque, just as they are in the duck breast, which is fuchsia pink and beautifully tender alongside creamed cabbage, pancetta and wild mushroom tortellini with wild morel mushroom bouillon.

The fillet of monkfish is wrapped in parma ham, with pomme nicoise and antiboise sauce providing exquisite yet delicate flavour. The desserts, a sweet and colourful mango parfait with coconut tapioca and lychee granite, and a wonderfully cool and creamy lemongrass crème brûlée with herb-infused berry jus, provides ample reminder that at Verre consistency is king.

what can i say about verre,food is always superb and always seems to be better than the last time we went.

Great taster menu with wines selected by Sommelier. Not cheap but couldn't fault any of the courses. Pork belly was superb and wife and daughter loved the sweets.

Food perfectly cooked but recipes for what they were worth failed to delight. We were highly disappointed.

Positives: Very good food and well presented. Attentive staff, if not a little over keen.
Negatives: Tired and out of date decor. Very expensive for what it is.
Dress code states "formal" yet T shirt and jeans in evidence
Summing Up: Lacks style and finesse - rather like its owner!
Does not begin to compare with Rhodes Mezzanine at The Grosvenor

when i fly into dubai i always make a stop into verre.it always has cosistantly great food and service.

Still my favourtite restaurant in Dubai and proving that "new" isn't always a good thing. The staff are so practiced that every visit is a pleasure and the food remains exciting and rewarding.
