When compared to the rest of Dubai’s dining out scene, Maya can be something of an enigma.
Consultant chef Richard Sandoval fuses traditional Mexican ingredients with ideas from Europe and Asia, just as he has done with Maya restaurants in New York and San Francisco.
If you want to try something different in this city, you’ll definitely find it here. Staff will be numerous and enthusiastic upon your arrival, but you may have to keep tabs on them during your meal – definitely make sure there’s one about to whip up fresh guacamole at your table, which will prove to be one of the most talked-about spectacles of your evening.
The enrijolas starter is a good example of what Maya offers – a soft corn tortilla containing Oaxaca cheese and black bean puree that resembles a Chinese duck pancake. The lamb chipotle is tender and juicy, and likewise the large slab of marinated halibut, sat on a mix of red and Chinese cabbage, that comes as part of the pescado talla. Perhaps with such a diverse menu full of ideas, there could actually be something for everyone.
