From Time Out Dubai Eating Out 2009

Reflets is the latest restaurant in a string of international hits by six-time Michelin-starred French chef Pierre Gagnaire.

Blanketed with lush purple carpet, and pink chandeliers flanking mirror-lined walls, it’s like the inside of a quaint jewellery box. A table of amuse bouches will welcome you with unctuous flavour, visual splendour, and satin textures.

Off the menu, go for the chicken pascaline: along with everything else in this otherworldly place, it has to be tasted to be believed. Arriving in parts, the dish is layered at the table, a creamy foie gras-infused broth poured over a shallow bowl of delicate truffled mash, the sumptuously tender chicken placed to the side.

Every dish arrives with flair, and if you opt for the lobster, you are introduced to the fellow before he becomes your main: you will feel as if you are starring in your own divine gastronomic comedy.

The dessert of ‘le texture’ – miniature meringues, frozen berries and the like, presented like a mound of precious gemstones – is the jewel in the crown of an astonishing meal in an astonishing new restaurant. When Michelin pays its visit to Dubai, we won’t be at all surprised if this gem is awarded a glittering treasure of its own.

Reflet's business lunch is an amazing bargain. It is everything you might expect from a three-star Michelin chef. We are lucky to have this restaurant in Dubai. We will be indulging in the amazing 3 course menu at least once a month. Amazing experience, food and service. You can understand why this restaurant is ranked in the top 100 in the world. (Number 100 on the list, actually)

Simply outstanding food and service. Wine prices were on a par with other restaruants in Dubai - though the wine flight which could be chosen to accompany the tasting menu was excellent value given the quality of the wines on offer. Wait staff were excellent and knew all the details of the food and wine.

This was an adventure, unique dishes, very brave ingredients and fantastic wines. If you want top quality food from a diverse menu then this is for you. The service was also very good and the sommelier was outstanding! Can't wait to go back.

Amazing. Has to be the first port of call when Mitchelin start handing out stars. Wine prices, as everywhere in Dubai, lets it down on the value. Special praise for the Enter The Dragon-style toilets. Certainly somewhere everyone should visit for tea, Mr Braithwaite.
