When you have restaurants in Las Vegas, Toronto, Beverly Hills, Seoul and Bangkok, among others, it’s safe to say you know what you’re doing. Especially when one of your restaurants is the owner of a Michelin star.

So when Korean chef, and former pro snowboarder, Akira Back set up shop in W Dubai – The Palm, we were delighted. And we were even happier to hear the restaurant was hosting a brunch. As what better way to sample the restaurant’s cuisine than in an all-you-can-eat à la carte feast?

And feast it is at this Palm spot, as the menu is huge and you can more than eat your fill.

Service is friendly and efficient, and the set-up of the brunch is described deftly. You have a selection of free-flowing starters, before a choice of main course and a sharing dessert platter.

Starters are unlimited, so go wild (although not too crazy, we’re warned, many diners don’t even make it to mains) and order up a variety of signature dishes.

The meal kicks off with a platter of fresh, expertly-prepared sushi, which is as good as you’d hope from such a spot.

From the plethora of starters, stand-outs include scallops in a shell. The molluscs come swimming in a rich sauce studded with veal bacon. It’s a top combo.

Another highlight is the tuna pizza – which is so good it made it onto our 50 best dishes of the year so far (see page 12). The slivers of fresh tuna are layered on crispy crackers and drizzled with a fragrant, light white truffle oil making a decadent dish.

Cajun tuna on crispy rice is also utterly delicious and moreish, with the punchy cold chopped fish sitting atop warm, crispy rice cakes. The textures, flavours and temperatures complement each other seamlessly.

From the mains don’t miss the black cod, which is buttery and delicious – coming inventively decorated with a cloud of yuzu foam. Josper-grilled salmon with garlic spinach and spicy teriyaki sauce is also a fun take on a staple dish.

Plant-based? There’s even a dedicated vegan menu, including dishes such as Beyond Meat tacos, which are a must-try and about as close to real beef tacos that you’ll find, bursting with smoky flavour and tang.

The restaurant itself is stunning, too, with massive windows flooding the restaurant with light at brunchtime, and allowing stunning views out across to Dubai Marina.

The chic, sleek space is cool and elegant, and large booths along the back wall provide the prime spot for admiring the vistas. In cooler weather there’s a sprawling terrace that’s an ideal spot for a drink, too.

It’s on the pricey side – but less so than others of its ilk – but for knock-’em out dishes in a super-cool setting, for a special occasion we can’t recommend this slick Palm eatery enough.
