‘The first thing I would do is make sure everyone is quiet to give my mum extra sleep. She needs it because my little brother wakes her up all night long. I would get Sonny and dad to help me make the breakfast for her, then we’d all tidy up so that mum doesn’t have to do it. When dad cooks he uses every pot in the kitchen and mum usually has to clean up. On the breakfast tray I would put a lovely place mat, chocolates, a magazine and flowers. My mum loves flowers. I’d also make her a mother’s day card from my brothers and me. I would give my mum love and care and let her do what she wants and not fight with my brother. While she’s eating, we’ll all sit with her and afterwards make her look fab and do her hair.’
300ml plain yogurt
1/2 cup orange juice
1 tbsp muesli
1 Wash and chop fruit (with dad’s help).
2 Place half the fruit, honey and orange juice in a blender and make a puree.
3 Take a tall, narrow glass and layer the puree, yoghurt, chopped fruit and repeat.
4 Garnish with mint leaves and a sprinkle of muesli and serve with a spoon and straw.
2 thick slices of white bread
2 tablespoons caster sugar
1 Beat the egg with a little water and add two teaspoons of caster sugar.
2 Melt butter on a medium heat until crackling.
3 Dip the bread in the egg mixture then drain off the excess.
4 Cook for two minutes on either side or until golden brown.
5 Absorb the excess butter on a kitchen towel then serve, sprinkled with the rest of sugar and, if you like, a little cinnamon.
1tsp baking powder
30g caster sugar
30g unsalted melted butter
1 tsp vanilla essence
1 Sieve flour and baking powder in a bowl. Stir in sugar.
2 Crack egg into another bowl and add milk.
3 Pour the milk mixture into the flour mixture and beat
4 Add vanilla essence and stir.
5 With dad’s help, melt butter in a pan. Once crackling, spoon in a large spoonful of batter into pan. Fry pancake until bubbles appear on top, flip over and cook on the other side. Repeat for rest of the batter.
6 Stack on a plate and serve with maple syrup.
Fresh fruit salad
Gather your mum’s favourite fruits, chop them up and pop in a large bowl. Add fresh juice to fruit mixture, so salad stays moist but not soggy. If you’re using bananas or avocados, add a little lemon or lime juice to prevent them from going brown. Decant a portion of fruit salad into a pretty bowl and serve with yoghurt and muesli on the side.
Amber’s top tips:
1 Get the entire family involved. After all, mum looks after everyone.
2 Keep it simple. No matter what you produce, mums will always be so grateful and it will warm their hearts.
3 If you want to make something, ask dad to get groceries the day before.
4 Don’t try anything new. Stick to what you know your mum loves and you know how to make.
