Consider yourself a foodie that wipes your plate clean? This new menu from Ultra Brasserie is right up your alley.

To keep its food wastage to a minimum, the healthy café has launched a limited time “Root to Stem” menu, offering dishes that come from “the root to the flower and fin to tail.”

Until Tuesday April 30, guests can choose from five different dishes, including fish, zest, fronds and shavings featuring grilled seabream with beet leaf salad, orange peel zest, fennel leaf, fennel and celery stalk shavings for Dhs58.

The menu also includes the “Pump It Up” for Dhs49, with cumin-spiced roast pumpkin, gorgonzola, roast pumpkin seeds and a salad of spinach, pomegranate seeds, sprouts and pomegranate dressing.

For veggies there's the “Serious Slaw” for Dhs42, which includes julienne broccoli stems, shaved cabbage and carrot slaw with light mayo, sliced green leek stems, sprouts, citrus and chimichurri.

There’s also the Dhs42 “Wilted Wonders”, with wilted beetroot leaf on sweet potato rosti, with two poached eggs and Hollandaise.

Finally, for Dhs23, you’ll get the café’s signature soup of the day.

Guests can get their hands on the root to stem menu throughout March and April, in both Emaar Square, Downtown Dubai and Marina Plaza, Dubai Marina locations.

The café offers a wide range of vegan and gluten-free dishes, and usually gets pretty busy during breakfast thanks to its mushrooms and avocado on toast and more.

After other delicious healthy-eating options? Brambles in Barsha Heights serves up a list of vegan dishes, while Jelly Belly in Dubai has just launched a vegan ice cream for all those plant- based eaters in the city.

Those plates will be looking spotless.
