Dubai’s first floating dessert launched at Masala Library

Think you’ve tried it all when it comes to desserts in Dubai? Think again.

Masala Library is launching a floating chocolate dessert on its menu on Tuesday (May 14), in ground-breaking news for those with a sweet tooth (and Instagram users) in the city.

‘The Floating Chocolate’ is a chocolate truffle that literally floats in mid-air using magnets and nitrogen for levitation.

The dish features 70 percent dark chocolate spheres elevated mid-air, in what can only be described as a culinary showstopper.

The revolutionary “post-molecular” menu at Masala Library features preparation and cooking techniques that have never been seen before according to the “Prince of Indian cuisine”, Zorawar Kalra, who opened the first outpost of the Indian fine-dining restaurant outside of India earlier this year, and the dining experience is a spectacle in itself.

Techniques such as pickling and fermentation using flasks of liquid nitrogen, led-blinking water baths, syringes and table top distilleries are used to produce cutting-edge Indian cuisine that is as flavourful as it is ethereal.

“Masala Library is a journey across India for your taste buds,” Kalra told Time Out Dubai.

“We’re using extremely cutting-edge and modern techniques. We don’t even like to use the word ‘molecular’ anymore – this is post-molecular – it’s never been done before.”
