Fan of Indian food? How about Indian molecular gastronomy using the latest technology and cutting edge culinary techniques?

We’re talking about Masala Library and the magnum opus of Jiggs Kalra – the “Csar of Indian cuisine”, no less.

The restaurant, which is the first by Kalra outside India, is at the forefront of innovative cuisine – not to say that means it isn’t authentic.

The menu showcases cuisine from key provinces of the country, with each dish elucidating the rich cultural heritage from centuries before.

By capturing the grandeur of centuries-old traditions and combining them with modern day cooking techniques and a futuristic presentation, the restaurant is changing the way Indian dining is experienced – and it’s certainly progressive, if nothing else.

And if you’re going to do it, you have to do it right, namely through one of the 12-course tasting menus.

Choose from vegetarian or non-vegetarian options and prepare for samples of all of the restaurant’s signature dishes, including deconstructed samosas, chicken tikka prepared three ways, mushroom chai and jalebi caviar to name a few.

We’ll be the ones gnawing at sizzling lamp chops.
