A second restaurant has been announced at the incoming The Royal Atlantis Resort & Residences on the Palm, with a Peruvian fine-dining spot set to open when the resort arrives next year.

Set to open in late 2020, La Mar by Gastón Acurio will be a gastronomic, experimental Latin American restaurant which will serve up some intriguing dishes alongside many of the country’s classics like ceviche, antichucos, grilled meats and more.

The restaurant adds to the already announced Dinner by Heston Blumenthal – the first Dubai offering from the famed experimental British chef.

La Mar will lean heavily on traditional Peruvian seafood but with sustainably-sourced grub at its core, with the team behind the restaurant saying that all fish served at La Mar “will be sustainably sourced to alleviate over-exploited fish species”.

It will also only serve fish that has been caught that day, so the menu will vary from time to time as the chefs behind the scenes work with what can be sourced.

That’s something we’re looking forward to getting our hands on, and although there is a little still while until we can set foot inside the new hotel and its new restaurants, we’re sure it’ll be worth the wait.

Set for a 2020 opening, the US$1.4 billion (Dhs5.14 billion) The Royal Atlantis Resort & Residences development will house 800 guest rooms and more than 230 serviced apartments.

There will also be a huge array of apartments and suites with private gardens, terraces and even private swimming pools.

The resort will feature more than 90 swimming pools in total, including a rooftop infinity pool suspended 90 metres above the Palm.
