Recipe: COYA Dubai’s pollo a la parilla

Dubai’s award-winning Latin American restaurant COYA has some great dishes available for delivery. But it’s also sharing recipes for some of its chefs favourite dishes, for you to try at home.

This one is sure to bring some heat to the table…

Pollo a la Parilla

Serves one

Preparation time: 10 minutes
Cooking time: 20 minutes

Ingredients:

• 100g of your favourite mild red chilli paste

• 1 boned baby chicken

• Drizzle of vegetable oil

• Red/yellow peppers, courgettes and potatoes

• Herb aioli (make your own by blending mayonnaise, garlic and fresh herbs such as coriander and parsley)

• Pinch of coriander cress

• Pinch of salt

Method:

• Brush your chicken with the chilli paste

• Heat a drizzle of oil in a skillet over a high heat

• Sear the chicken on either side

• Brush with a little more chilli paste

• Place in an oven heated to 170°C for 12 minutes

• Place your vegetables in a pan and sautée in a little oil and salt until tender

• Plate your vegetables, chop your chicken in half down the back and place atop the vegetables

• Top with a spoonful of herb aioli

• Sprinkle with coriander cress
