Recipe: Bull & Bear’s wagyu beef tartare

Fancy a no-cook dish? Ever made tartare? Now’s the time to start, thanks to this recipe from Dubai’s award-winning Bull & Bear, crowned by North American restaurant at the Time Out Dubai Restaurant Awards 2020.

Born in New York, in the Waldorf, Bull & Bear serves up knockout plates, including a mean mushroom fregola and its signature Bull & Bear burger.

In the meantime, here’s how its wagyu beef tartare is done.

Wagyu beef tartare

• 120g striploin beef
• 2 tbsp relish dressing (see recipe below)
• 50ml saffron aioli (see recipe below)
• 1 organic egg yolk
• Salad greens
• 1 slice of grilled sourdough bread

For the relish dressing:
• 100g finely chopped cornichons
• 50g finely chopped shallots
• 50g finely chopped capers
• 75g Dijon mustard
• 15g finely chopped anchovies
• 375g tomato ketchup
• 10g salt
• 5g pepper
• 25g smoked paprika

For the saffron aioli:
• 10g garlic
• 15ml lemon juice
• 65ml saffron water (1 gram saffron : 65ml water)
• 850g Japanese mayonnaise
• 3g salt
• 10ml oil

For the mixed salad:
• As desired frisse
• As desired fine herbs
• As desired lemon dressing


Saffron aioli:
• Soak the saffron in warm water to infuse

• Peel and finely chop the garlic until it turns into a paste

• Mix all the ingredients together and set aside

Relish dressing:
• Mix all ingredients together (this dressing can be kept in the refrigerator for up to 5 days and is very versatile to use with other dishes)

• Cut the beef into small dices and place in a bowl over ice

• Add two tablespoon of relish and mix well, adjust seasoning

• Place in a ring mold to achieve a perfectly round shape

• Remove the ring. Separate the egg yolk from white. Place the yolk in the middle of the tartare

• Serve with a small mixed salad on the side and toasted slice of sourdough bread

• For more traditional approach, serve the dish with French fries
