Amid a flurry of glamorous new openings towards the end of 2019, contemporary Mexican restaurant Chingón missed out on the chatter it deserved.

But if it can start to get its voice heard, there’s no reason for this lofty Business Bay eatery to be left out of the conversation.

Set at the top of the Grand Millennium Business Bay, with views of Downtown Dubai and the Burj Khalifa, the space is decked out in sultry black and amber hues, with floor-to-ceiling windows in the main dining room. It is, admittedly, an almost needlessly large space on the whole, but the decision to split the venue up into three distinct areas is a smart one.

Before visiting, we’d heard gripes about haughty service, but there’s not a whiff of it. Staff are charming, not to mention almost self-consciously well-versed in the menu. There’s even – unexpectedly – a sommelier on hand to recommend pairings.

Starters, if not mains, are relatively fairly priced, mostly ranging from Dhs45-100, and we dive straight into the infladitas (pictured above). Crammed with fresh, charred corn salsa, they’re sweet, tangy, and surprisingly sizeable. We’re encouraged to order a few signature dishes, including the guacamole (we draw the line at the chimichurri burrata), which is good as anywhere. But dishes you can get anywhere aren’t the ones that make this place worth a visit.

So let’s talk about the dishes that are.

A trio of Baja fish tacos (Dhs85)  – crispy, creamy, full of zing – that knock it out of the park. A tongue-tingling snapper ceviche (Dhs125) with a fruity lift from marinated mango. Of the mains, the chipotle roasted cauliflower is a winner – and not just because at Dhs110, it’s the best value by a mile. Easily shared between two (or three, if you’ve savaged the starters), it’s an absolute fiesta of competing flavours, and all the more fun to eat for it.

If Chingón can keep standards high (and dial the price of mains down), it could be on to a winner.
