Chef Natalia Vlasenko shares her signature dish


With Russian dancers to entertain, head to the Royal Ascot for the true Troyka experience, but you can cook up this warming dish any time thanks to its simple recipe.

Chef Natalia: says, ‘This is a classic Russian dish: pasta filled with cottage cheese or, if you choose, you can use potato. It is a dish our customers enjoy and it is an unbeatable feeling when I see this because every time I cook, part of my soul, passion and love is included.’

The recipe

(Serves four)
• 20g sugar
• 2g salt
• 100g flour
• 50g yoghurt
• 100g cottage cheese
• 1 egg
• 1ltr water

The method
1 Mix the flour, sugar, salt, egg, yoghurt and water until you get a doughy mixture.
2 Roll the dough out flat and us a round cutter to cut pasta circles.
3 Spoon the cottage cheese onto half of each circle, fold, and shape the edges of the dough.
4 Put the them into boiling water for 10 minutes.
5 Drain and serve with sour cream.

Chef Natalia quickly excelled as a chef in the Ukraine, becoming an executive chef after only one year in the industry. She began working at Troyka restaurant in the Royal Ascot Hotel in 2005 as the chief chef’s assistant and now she is the chief chef, cooking authentic Russian dishes for the customers at Troyka daily.
