Lobster ceviche: Asado’s version of this chilled South American dish comes stuffed with delicious morsels of tender fish and plenty of zing. Lobster, tuna and scallops all play a starring role. Plus, it’s served amid billowing puffs of smoke, thanks to a little dry ice.

Cold cacao and coffee soup: We realise it’s difficult to imagine duck liver as anything but savoury, but the creamy offal can actually make a lovely dessert base. Such is the case with this chilled soup, made from coffee and cacao and served with orange sorbet. We realise it’s a lot of flavours, but it works.
