Cold cacao and coffee soup: We realise it’s difficult to imagine duck liver as anything but savoury, but the creamy offal can actually make a lovely dessert base. Such is the case with this chilled soup, made from coffee and cacao and served with orange sorbet. We realise it’s a lot of flavours, but it works.
