Jamila Valentine, manager of Filipino favourite Kabalen, shares a few festive tips with Time Out.
500g round noodles
250g peeled shrimp
10g annatto powder (atchuete)
2 packets of palabok powder
(Oriental gravy mix)
½ cup cooking oil
1 cup water
¼ tbsp black pepper
2 tbsp minced garlic
3 finely chopped medium-sized onions
10 hard-boiled eggs
4 tbsp fried garlic
4-6 lemon slices
1 Boil the spaghetti noodles for 15 minutes. Rinse with tap water and drain thoroughly.
2 Heat the cooking oil in a small frying pan and fry the garlic and onions until lightly browned.
3 Add the annatto powder, black pepper and shrimp, then cook for two minutes.
4 Place in a casserole dish and add one cup of diluted palabok powder.
5 Stir until the mixture becomes sticky, then add the noodles and boiled eggs. Stir well and cover tightly.
6 Cook for another 13 minutes, then garnish with lemon and serve.
