•300g rice noodles
•150g sliced cooked chicken (poached)
•70g yellow tofu
•30g red onion peeled
•30g diced pickled radish
•50g bean sprouts
•20g Chinese chives
•70g Phad Thai sauce
•30g tomato ketchup
•Corn oil for cooking
•20g bean sprouts
•20g ground peanuts
•1 lime cut in half
1 Soak the noodles in warm water for about 15 minutes.
2 Cut the tofu into small cubes.
3 Finely slice the red onion and roughly chop the Chinese chive.
4 Place a pan on the stove to heat.
5 Stir fry the red onion and pickled radish.
6 Add the eggs and mix until cooked.
7 Add the chicken and continue to stir fry.
8 Add the noodles and a splash of water to help the noodles cook.
9 Add the Phad Thai sauce and tomato ketchup and mix well.
10 Finish with the bean sprouts and Chinese chives and mix in.
11 Place on a plate and garnish with the bean sprouts, peanuts, lime and Chinese chive.
