The chefs from Al Nafoorah share a hommous recipe


Probably the most consumed dip throughout the Middle East, hommous makes a wonderful appetizer or accompaniment to a meal.

The recipe

•0.5g garlic
•80g chick peas
•3ml olive oil
•60g tahina
1/4 tsp salt
•1g bicarbonate soda
•30ml fresh lemon juice

1 Soak the chick peas in cold water for 24 hours before used, drain the water.

2 Cook well with bicarbonate soda for 50 to 60 minutes.

3 Allow to cool – reserve a small amount of the chick peas for garnish.

4 Place in a blender and puree.

5 Add the tahina, fresh lemon juice, salt and garlic. Ensure that it is of a smooth consistence.

6 Transfer to a serving bowl drizzle with olive oil and place some hot cooked chick peas in the center, and garnish.
