Top Dubai chef celebrated after 28 years in Dubai Kitchens

The winner of Time Out’s inaugural Outstanding Contribution Award has had food on the mind from an early age. Asked why, in his early years, he decided to take up an apprenticeship as a commis chef, he is purported to have replied, ‘If you work in the kitchen, you’ll always get something to eat’. This basic instinct to eat has inspired a globe-trotting career, from jobs in various kitchens near his home town in the Pyrenees, to the opening of his own restaurant in Sussex UK, then, in 1983, his appointment as executive chef at the venerable Dubai Country Club.

From the Dubai Country Club, he moved on to the Emirates Golf Club, where for more than two decades he has studiously avoided swinging a club, all the while tending the kitchens of La Classique, fine tuning its traditional French fare and, in the process, ensuring he’s always got something worthwhile to eat.
