Risotto Funghi E Rucola

<em>Time Out</em> and Taste Of Dubai bring you the signature dishes of some of the city’s top chefs

Some of the city’s finest chefs will be presenting their best dishes at Taste Of Dubai 08.

They will be showing off the tricks of the trade and giving visitors to sample food.

Signature dish: Risotto Funghi E Rucola

Carnaroli rice
Dry white wine
Vegetable stock
Mix mushrooms
Parmesan cheese

Heat the butter in skillet, add chopped onions and sauté’ for 2-3 minutes over medium heat, then add carnaroli rice.

Stir the rice well with the onions and butter then add dry white wine.

Add the mushrooms, when the wine is about ¾’s absorbed, reduce the heat to the lowest setting, and ladle in enough stock to cover the risotto.

When the added liquid level drops, re-cover the risotto with more stock.

Continue this process for about 20 minutes.

When the rice is mostly tender, but with a hint of texture to it, take out of the fire and add butter and parmesan.

At this point, stir the risotto profusely to blend in the cheese and butter.

Let it stand for 2-3 minutes and then serve in a pasta plate.
