Preparation time: 30 minutes
900g chicken drumsticks
3tbsp mango chutney
3 cloves of garlic
1 green bell pepper
1 yellow bell pepper
100g black olives
1 tbsp olive oil (your own)
3 tbsp soy sauce (your own)
2 teasp mixed dried herbs
1 teasp salt (your own)
1 pinch black pepper (your own)
Rice (your own)
Tip: If you’re in a hurry, put the chicken in the marinade and straight into the oven.
1 Preheat the oven to 225˚C.
2 Place chicken drumsticks in a big ovenproof dish.
3 Squeeze the juice from two lemons over them.
4 Add soy sauce, mango chutney, crushed garlic, salt and pepper. Mix well.
5 Start boiling the rice.
6 Cook the chicken in the oven for about 15 minutes.
7 Meanwhile, slice the tomatoes and onions and cut the peppers into chunks. Take the chicken from the oven and add the onions, tomatoes, peppers and olives.
8 Drizzle with olive oil and sprinkle with mixed dried herbs.
9 Mix and place in the oven for another 10-15 minutes, until the chicken is done. Serve with rice and extra mango chutney.
