‘Gado gado is one of the truly authentic Indonesian dishes. It’s very popular because it’s easy to make and the ingredients can be found in any supermarket. It’s also very healthy – it’s made from steamed vegetables with traditional Indonesian peanut sauce and spices.’
50g cabbage, shredded
450g long green beans, sliced
500g kangkung (water spinach)
250g fried tofu, cut into cubes
For the sauce
400g roasted peanuts
200g Indonesian brown sugar
75g fresh red chilli
4 cloves of garlic
1 Boil two litres of water and add all the vegetables, then simmer for 10 minutes and drain.
2 Prepare the ingredients, then crush the salt and chilli with the garlic.
3 Crush the roasted peanuts in a blender to create a paste, and add to the chilli and garlic mix.
4 Mix together with a little hot water and slowly add the brown sugar until everything is well mixed.
5 Now add the steamed vegetables and fried tofu to the sauce mix and stir until everything is combined.
6 Serve on the plate with some fried onion, Indonesian crackers and steamed rice.
