Chef Yvan Rocher at M’s Beef and M’s Seafood Bistro
‘This cold soup is the perfect recipe for the hot months – it can be served as a starter or as a snack. It’s really easy to prepare and also very low in calories. My mum used to make this dish for me, and I love serving it to my customers.’
Ingredients (serves four)
500g green apples
200g red onions
100ml olive oil
1 bunch fresh coriander
½ bunch fresh dill
20ml Tabasco sauce
Salt and pepper to taste
1 Peel the apples, cut them into quarters and remove the seeds.
2 Peel the cucumber and slice thinly.
3 Peel the lime and remove the segments. Set aside the lime juice that is left over.
4 Peel the onions and slice them thinly into short, thin strips.
5 Finely chop the bunches of fresh coriander and dill.
6 Mix the apples, cucumber, onions, coriander and dill with the remaining lime juice, olive oil and Tabasco sauce.
7 Season with salt and pepper to taste.
8 Place the mixture in a blender and purée until smooth.
9 Put the mixture in the fridge for approximately 30 to 45 minutes, or until it’s thoroughly chilled.
10 To serve, pour the soup into a glass dish
11 Decorate with the lime segments.
