Red snapper fillet 'Pandang-style', seasoned with café de Paris butter, wrapped in Pandang leaves and pan-fried. With crispy oyster, braised de puy lentils and smoked salmon sauce.

Roast turkey consommé, fondant potatoes, orange carrot puree, Brussels sprout leaves, turkey breast and crispy parsnip.

Goose liver and beef burger, butternut squash batons, mixed wild mushrooms, savoy and red cabbage chutney, goose liver sauce and green chilli-salted celeriac crisps.

White chocolate and blueberry mousse, pear jelly, gingerbread crumble, and a red fruits sorbet.
