Grilled corn Mexican-Style
1 full-size sweet corn
50g Cotija cheese
2x Bamboo sticks
2 lime wedges
1. Place the sweet corn onto the grill and allow to brown on all sides.
2. Remove from the heat and cut into two.
3. Insert one bamboo stick at the bottom of each corn.
4. Using a pastry brush, lightly brush the mayonnaise over the corn and roll in the Cotija cheese.
5. Garnish with a sprinkle of chili powder and a wedge of lime. And serve!
