1 How excited are you for Dubai Food Festival?
Dubai has become like a second home in the past few years. I’m excited to hang out with some of my mates – Shannon Bennett, Gary Mehigan, Manu Feildel and Matt Moran.

2 What can we expect from you at the Dining With the Stars event?
I’m looking after the dessert, where I’ll reproduce a dish that we serve at my Melbourne restaurant, The Press Club. But this will be for 250 people, so I’m actually quite scared.

3 What’s your favourite restaurant in Dubai?
Bu Qtair. I like to really get down and dirty and dig my fingers in the more real stuff.

4 What’s your favourite ingredient?
Olive oil is a staple in my recipes and without it, you’ll be taking away my taste buds. I also love lemon.

5 Would you consider opening The Press Club in Dubai?
I will probably never replicate The Press Club anywhere else because it’s just too difficult, and the concept is very hands-on. But the idea of another restaurant is not off the table. I want to come in respecting the culture and the region, and it has to be the right hotel, too.
