Chicken in green curry with Thai eggplant

80g chicken thigh
20g green curry paste
150ml coconut milk
30g baby eggplant
30g round eggplant
20g coconut palm heart
5g sweet basil leaves
5g red chili (sliced)
1tbsp sugar
2tbsp fish sauce
30ml cooking oil

Method
窶「 Sautテゥ the green curry paste in cooking oil until you get a nice aroma, pour coconut milk and bring to boil.

窶「 Add the chicken, heat for 2 minutes then add the eggplants and coconut palm heart.

窶「 Season with fish sauce and garnish with sweet basil leaves and red chili.
