The atmosphere at Pure Sky is calm and relaxed. On arrival, we are seated by the attentive staff and offered a glass of bubbly. Our table overlooks the Arabian Gulf, so we can take in the sunset view while we dine.

Brunch here is sharing style: six starters, seven mains and two desserts between the two of us.

At first, the thought of all that food coming our way is a little daunting, however, the dishes are not overwhelming and if we want any more we just have to ask.

Our six starters are presented together. The tuna ceviche blanca is creamy yet light and the two large scallops with beetroot taste fresh and are cooked perfectly. Two generous wedges of Portobello mushroom tempura are crunchy yet juicy and the roasted fruit with camembert is a classic combination. All the time, our bubbly is kept topped up.

In between courses, the staff ask if we want a break and how long for so they can prepare our next course fresh and on time. This is a nice touch; we don’t want to rush our excellent dining experience so far.

The slow-cooked short ribs with celeriac and apple are by far the best dish on offer for the mains and we reorder it. The meat is tender and falls apart, while the celeriac is smooth and the apple lifts the dish with a sharp sweetness.

Another favourite is the grilled salmon and pea purée, which is brightly coloured and flaky. The dry-aged beef sirloin with bone marrow jus is too firm and tough, but it’s clear so far that the chef is expert in matching flavours. Simple is best and Pure Sky does this very well.

There is some room for improvement when it comes to the dessert, which is just two options of caramelised banana or raspberry cheesecake. After so many creative dishes, this is slightly underwhelming. Both are still to the high standard already set, though a chocolatey dessert would make up a perfect trio to end a fabulous dinner.
