A the winner of our Best Newcomer, Fine Dining 2017, RÜYA – which aptly translates as “dream” in Turkish – knows a thing or two about combining flavours and getting them spot-on every time.
And now there’s good news for lovers of Anatolian cuisine, as from last Sunday (October 1) there are now several exciting new creations gracing the menu.
From sardines to a king prawn risotto, plus an interesting sounding kazandibi (a traditional milk-based dessert) we love the look of many of the new items. However, we can’t help being especially drawn to this butter-poached lobster dish.
RÜYA has built up a loyal fanbase since opening last autumn and the menu’s most recent introductions reflect this.
“The menu changes when we start to receive specific requests from guests; we want to continuously surprise them with new creations,” chef Colin Clague tells Time Out Dubai. “This lobster, for example, has been put on the menu as guests have asked for a more luxurious dish.”
And luxurious it is, with huge, sweet chunks of lobster meat paired with urfa biber (a Turkish chilli) toasted simit, ginger, mint and chilli oil.
“Seasonality also plays a crucial role, when fresh ingredients arrive with the new season,” continues Clague.
“We will also add more truffle to our menu when they get good enough quality.”
