New Turkish restaurant Ruya set to open in Dubai

Time Out reveals that a new Turkish restaurant, Ruya, set to open in Dubai Marina soon, will be headed by the partners behind Coya, Zuma and Nusr-et

Rϋya, which translates as ‘dream’ in Turkish, is planned to open in Dubai Marina’s Grosvenor House by the end of September.

The kitchen will be led by executive chef Colin Clague, who most recently headed up Jean Georges Dubai and Qbara in the city.

Clague brings a wealth of experience and talent with him, having previously worked at Jason Atherton’s Pollen in Singapore and Zuma in London and in Dubai.

Judging by his Instagram profile, the Isle of Man chef has been seeking culinary inspiration in Turkey itself, buying kebab knives in Istanbul and trying out everything from street food to Turkish haute cuisine.
