Traditional restaurant customs have been relaxed at Vapiano. Instead of taking a seat and asking a waiter for a dish, you’re expected to walk between various cooking stations and select your dish with an electronic ordering system. In the same manner as a brunch, you wander around various areas and choose from a plethora of classic Italian dishes. There are dried herbs at the cooking areas and fresh basil on the tables, which allow you to season dishes to your taste. The venue itself is clean and neat but also a tad impersonal and sterile. While healthier than other fast food outlets, the dishes, despite being freshly prepared, are merely competent and the experience of dining at Vapiano fails to achieve anything memorable or convey the passion that should be associated with Italian food. We understand the concept when the venue’s busy, but at quieter times we’re not sure about paying not to be served.
